Three estates united by one of France's most distinctive geological threads : Kimmeridgian limestone. From the crystalline precision of Chablis to the mineral tension of Menetou-Salon, these are wines defined by the ground beneath them.

Kimmeridgian limestone is one of the world's great wine soils : ancient, mineral-rich, laid down by a shallow sea that covered this part of France 150 million years ago. In Chablis, it gives Chardonnay its famous tension and salinity. In Menetou-Salon, that same geological backbone shapes Sauvignon Blanc of striking purity and Pinot Noir of rare elegance. The three estates here each bring a different perspective to this shared foundation: the energy of a new generation, the quiet confidence of nine generations, and the benchmark precision of a domaine that has helped define its appellation.

Triptyque2

A young winery rooted in family and terroir.

Founded in 2023 by Tommy Chevallier in the village of Venoy, Domaine du Triptyque carries a family legacy forward with a distinctly forward-thinking vision. The vineyards, passed down from his father and uncle, have been farmed organically since 2018. A new winery built from biosourced materials, largely powered by solar energy, was completed in 2024. In the cellar, natural fermentations, indigenous yeasts and bottling without fining or filtration preserve the full expression of each vintage. This is Chablis for the next generation, made with the same reverence for terroir and a new commitment to the land's future.

Meuliere

A living legacy since 1779.

In the village of Fleys, just east of Chablis, Domaine de la Meulière has passed through nine generations of the Laroche family, each one adding quietly to a legacy built on patience, precision and deep respect for the land. Brothers Nicolas and Vincent Laroche now steward nearly 30 hectares across more than 40 parcels, all rooted in the Kimmeridgian limestone that defines this region. Certified High Environmental Value Level 3, the estate combines careful agroecological farming with a cellar approach that embraces tradition and thoughtful innovation : fermentations across stainless steel, oak and terracotta amphorae, chosen parcel by parcel.

The benchmark domaine of Menetou-Salon.

Founded in 1959 by Henri Pellé in the same year Menetou-Salon received AOC status, this is an estate that has shaped its region's identity. Today, the fourth generation : Paul-Henry and Anne Pellé, oversee nearly forty hectares of Sauvignon Blanc and Pinot Noir on the Kimmeridgian limestone hills surrounding Morogues at 300 to 350 metres elevation. Farmed organically and biodynamically, with hand harvesting and precise parcel selection throughout, these are wines of remarkable purity and ageing potential. Sauvignon Blanc that is at once mineral, saline and deeply expressive of its place.
